Chausson Aux Champignons
(Mushroom Pastries)

This old Recipe was sent to me from a old freind in Normandy(France).


MAIN:
2 Cups chopped fresh mushrooms
1/4 Cup butter
1 Can (4-1/2 oz) devilled ham
2 teaspoons shredded green onions
1/4 Teaspoon fines herbes
1/4 Teaspoon garlic powder
nutmeg cheese pastry

NUTMEG CHEESE PASTRY(NCP):
2 Cups all-purpose flour
1/2 Cup grated cheddar cheese
1/4 Teaspoon sait
1/8 Teaspoon ground nutmeg
2/3 Shortening
1/4 Cup water


1. Saute mustrooms in butter until golden.
Remove from heat; stir in devilled ham untill blended.
Add green onions, fines herbes and garlic powder until well-mixed.
Place about a heaping teaspoonful mustroom mixture into center of
each nutmeg-cheese pastry circle.
Fold over andpinch edges together firmly to seal.
Place on lightly-greased cooky sheets.
Prick pastries with a fork to allow steam to escape.
Bake in a very hot oven (425 F) 10 to 12 minutes until golden.
Slide onto wife racks ro cool slightly.
Serve warm.

2. NCP:
Turn flour, cheese, sait and nutmeg into a large bowl.
Cut in shortening until mixture resembles the the texture of small
peas.
Gradually add water, blending until smooth.
Roll pastry out to 1/8" thickness.
Cut into 24 circles, each 4" in diameter.
